It’s soup season!!! Try this unique soup recipe made by Mich sprinkled with our toasted coconut flakes

INGREDIENTS |

2 sweet potatoes 5 medium big carrots 400ml coconut milk (I used @kokobio_dk ) 1.5 cups veggie stock Spices: cumin, curry, paprika, garlic, basil and salt |
INSTRUCTIONS
- Chop the sweet potatoes and carrots into small cubes. Heat up a tbsp coconut oil (or other oil) in a pan and add the cut up veggies. Add the spices and mix well. Cook for 2mins and then add in the coconut milk and stock. Bring to a boil and let sit for 25mins. Taste to see if you wanna add more spice!
- Use hand blender to get smooth consistency!
- Serve with @jungle_fruit coconut chips, sriracha hot sauce and natural or coconut yogurt
